New head chef and area manager to spice up Telford restaurant

A new head chef and area manager have spiced up a Telford restaurant.

Chef Ram Chandra has joined the team at Mimosa family restaurant and bar, based at Southwater in the town centre, and Dil Nepali will oversee the business for the chain from now on.

The new chef has 25 years experience in catering including working at Le Meridien Hotel, Fun and Food Village Resort and the five star Radisson Hotel in New Delhi, India, as well as Astoria and Ambassador Hotel Group in Dubai before various roles at restaurants in Wolverhampton.

He specialises in healthy eating and is looking forward to extending his links with the Miljhol Indian community in Shropshire.

He said: “I am looking forward to the challenge at Mimosa.

“It seems like a growing business but there are things I want to improve and change, particularly with the menu.

“It is different from some of the roles I have had in the past but I am used to catering for large number of people and enjoy coming up with new creations so I look forward to getting to know the people of Telford and finding out what they enjoy.

“I pride myself on food quality and safety.”

Chef Ram is known for his vegetable and fruit carving creations as well as his signature dish, a freshly marinated North Indian garlic chicken and achari lamb chop made with fresh herbs and authentic spices.

He is part of a new team of chefs who are now working to bring out the best quality of food in Telford. A fresh new menu will be launched soon.

Meanwhile Mr Dil Nepali, who has been involved in the business since it launched in 2013, took on his new role as an area manager last month.

He will return to the restaurant from his base in Aldershot every two weeks and is looking forward to the changes Chef Ram will make.

He said: “In his first few days the chef has been getting to know the produce here in Telford and what we offer.

“He is a highly experienced chef so his addition to the team will definitely make a difference to the restaurant, with his knowledge of food and culinary experience.

“He is motivated and I am very proud that he is with us here at Mimosa.

“Each time I come back to visit the restaurant here I am expecting to see changes.

“As well as working with the new chef I am training managers and other staff here as part of my new role.

“Our focus is on customer satisfaction in both food and overall Mimosa experience.”

The restaurant has been building a reputation as a family and business friendly restaurant and bar for three years.

Director Kuldeep Gill said the new staff members were a huge coup for the business.

She said: “I am delighted to welcome Chef Ram and Dil to our team in Telford.

“Dil has been involved for a long time, since we launched, and he has overseen a lot of change and improvements already.

“I am confident he will take on the area manager role effectively and ensure we have the best restaurant we can here in Telford.

“Chef Ram’s influence will go a long way to ensuring this as well, he has so much passion for the food he creates and has learnt a lot in all the different places he has worked.

“Both men have an amass of experience and are looking forward to improving the dining experience for our customers.”
